As with raw materials, quality and regionality are firmly embedded in my concept when it comes to equipment. That’s why I chose the company Manz for the oven. Manz is based in Creglingen and is a German family business. The ovens are made in the region and are of the highest quality. The oven of the required size, including the proofing chamber, costs approximately €30,000. As with everything, quality comes at a price.

I use only flours from the region. My three key partners have been determined through experience. The BioTonmühle Ditzingen, Stadtmühle Waldenbuch, and Zellermühle Otterweier are my trusted mills.
